Summery Tarragon Chicken Salad

This chicken salad is so refreshing, and the tarragon really adds a brightness and depth to it compared to just normal boring chicken salad. Enjoy!

Ingredients

  • 1 stalk Celery finely chopped
  • 1/4 cup Red Onion finely chopped
  • 1 tbsp Fresh Tarragon minced
  • 1 1/2 cups Cooked chicken Home cooked or store-bought rotisserie, cut into bite sized pieces
  • 1/3 cup Mayonnaise preferably homemade
  • 1/2 cup Grapes organic, halved or quartered if large
  • 1/2 tsp Sea Salt add more to taste
  • 1/4 tsp Ground Pepper

Instructions

  • Finely Chop the celery stalk and the 1/4 cup of red onion (this is usually 1/4 of an onion for me).
  • Mince the Tarragon. It does not have to be perfect, but you don't want a whole leaf of it in the salad :)
  • Next, dice the chicken into bite size pieces.
  • Measure out 1/3 cup of mayo and add that in - It is great if you can make and use homemade (recipe and video of how easy coming soon!). Primal Kitchen makes a clean version with avocado oil.
  • Now, halve the grapes or quarter them - it really depends on the size of grape. I like to use red grapes for color and sweetness.
    Of note - you really want to try to choose organic here. Conventional are one of the top fruits sprayed heavily with pesticides. If you can't, I understand and have been there many times. I try to do a white vinegar and water soak on them for a little bit to cut some of the gunk off.
  • Add a pinch or two of Celtic Sea Salt or Real Salt and Pepper to taste. Some of you like more, some less. :) Fold it all together and try, try, try not to eat it all in one sitting! :)

Notes

I hope you love it! If you don't like tarragon, then this isn't for you OR simply omit it. 
You can also use different fruit like apples as well. We have done that at times.
